Almond Meal Blueberry Pancakes were NOT a hit

So, we tried another recipe out of the Everyday Paleo book.   We have LOVED all of the recipes so far,  minus this one.  

The ingredients:   Almond meal, shredded coconut, eggs, coconut milk
, apple grated
, blueberries, and cinnamon
 


Cooking in Olive oil 




We do not have a picture of the finish product, as everyone took a bite didn't like them.  Here is a picture from the Everyday Paleo book  of what  it should look like.   
 
 

Here is the recipe for those who want to give it a try themselves.
 
2 cups almond meal
1/2 cup finely shredded unsweetened coconut
3 eggs (we used egg whites)
1 cup coconut milk
2 tablespoons coconut oil
1 apple, grated
1 cup fresh or frozen organic blueberries
3 tablespoons cinnamon   
 
 
1. Mix all ingredients together.
2. Using 1/4 -cup scoops, cook the pancakes on a super -hot griddle or in a frying pan greased with coconut oil.  Cook for about 4 minutes per side, making sure the pancakes are brown and crisp before flipping.
3. Serve with more blueberries on top and a sprinkle of cinnamon
 
Prep Time: 10 Minutes
Cook Time: 8 minutes
Serves 5

Back to School


School is back in session and we've already been sick one day. Never fails, the first week of school we seem to always catch something. Here are some pictures from the first day of school.

Everyday Paleo

 So we have jumped in feet first to eating Paleo.  For three of the five of us the transition has been pretty easy, for the younger two, they are Paleo eating for breakfast and dinner.   Eggs and veggies were not their favorite items, so we are slowly transitioning them into it.  

Originally we went to the nutritionist due to our weight.  It really has been a God send, as we have since found out about other health conditions and concerns.   We found out this week that one of our children was diagnosed with Hoshimoto's Thyroiditis.   I was a little taken back, and I have to admit I  did have a little break down talking to a relative about it. I know it's not the end of the world, and know others dealing with conditions much more serious, but just hard as a mom when your child has something and you can't fix.  The GOOD news is  now a lot of things make sense, and we will start the process of replacing what their thyroid is not doing.  We also found out diet is HUGE in this process.  Due to this it is now not optional , but a requirement for this child to be dairy, gluten, soy, aspartame and sugar free (as much as possible) .    We have also found out that a few of us have some sugar levels issues, but nothing that can't be corrected with diet.   

We have started cooking out of the  Everyday Paleo Book  By: Sarah Fragoso.  Anyone who knows me knows all my life I have HATED, can't stress that enough, cooking.   I can actually say I now look forward to planning the meals for the week, and even assisting Mondo in the kitchen to learn how to make them.   Maybe it's the fact that this has become a new family time to spend together, versus sitting on the couch, or that I know that this is good for us.

Since many of our friends have asked for recipes,  we figured we would start posting some of the meals on here.  Again, for now, they have all been from one book, but as we get more familiar with the options, we will start to make up our own.

Here are some pictures from the last week: 

Savory Cauliflower fried rice and Easy Steak Skewers.   This was our very first dish we tried.  Rice has been a staple in our family, white rice that is, and this is a healthy way to use cauliflower, and have it look like rice.   You can find this recipe  here



This is called Tuna Fish Boats. WE had this for lunch today. It was surprisingly, very filling. We had one a piece, with a small salad.




 This was a Turkey Burger with onions, lettuce, tomatoes , avocado and some fruit. 




This is our new breakfast favorite.   You mix zucchini, spinach, green onions, roasted red and yellow peppers, and some turkey bacon in a food processor.  You mix that with eggs or egg whites and place in an oiled (coconut oil) pan.  We use a cupcake pan, and unlike the picture, do not use the cupcake wrappers, they WILL stick to it.

 
 


We made our own chicken strips using Almond Flour or Almond Meal as the breading.  It's gluten free and very tasty.  This is the only recipe not from the book.   We also made our own honey mustard dressing, as most dressing or condiments have gluten in them. This was last nights dinner.

Here's to a Healthy Start

For many years I have said next month I will start to eat healthier, workout, etc....   Of course , something always seems to come up.  My  kids have appointments, house needs to be cleaned, or some other excuse.  After finding out that my oldest daughter and husband our pre-diabetic, didn't know there was such a thing, it gave me a scare.    So no time like the present to start to make some changes.

For as long as I can remember I have been a huge soda drinker. But it's diet I kept telling myself.   Come to find out when I saws the nutritionist, that is just as bad. (Yes, I knew this, just was in denial.) So it's now been 10 days with no soda.   A first of many changes to come.   I am excited, but scared some old habits could come back.  Some of you know this, maybe very very few of you, but when I was in high school and just out of high school I would focus on what I weighed.   If I started to see my weight gain I would eat salads for  several weeks to drop weight, or not eat at all. I didn't admit to myself that I was starving myself to stay skinny till I was much older, looking back.   I think one of the things that has held me back from trying to lose weight is the fear that I will get obsessed with the number on the scale again, and not on my health.  The nutritionist said if it starts to bring up old habits, I can weigh in her office and she won't tell me the number, unless I want to know it. It's about the life changes and habits, not the number.

I got my blood  levels back and yea, everything so far looks good, even my cholesterol. The only low item is my vitamin D levels.  So we'll work on that.

The kids are back to school tomorrow and I am going to start going to the gym.  I've started carrying a food journal, and plan to go to the gym 4 days a week , and walk the other days.   I have very supportive friends, and know that if I put my mind to it, and stop all the excuses , failure will not be an option.   The whole family is getting on board and I am looking forward to the journey.
